Located on the 13th floor of GINZA SIX in Ginza, “てんぷら山の上” is a tempura specialty restaurant with a history of over 60 years. The restaurant strictly selects fresh ingredients for each season and imports them from all over the country. By using the finest vegetables and seafood ingredients, the restaurant offers seasonal cuisine.
On the other hand, the restaurant uses an exquisite blend of two 100% pure sesame oils. One is “Taihaku Sesame Oil”, which is extracted directly, and the other is “Pure Sesame Oil”, which is extracted after lightly frying. During the cooking process, in order to maintain the freshness of the sesame oil and to extract the flavor of the ingredients, we do not add new sesame oil, but rather use new sesame oil each time we fry several portions of an ingredient. This brings out the maximum flavor of tempura.

The tempura fried by “Ten Bru Genji” has a light texture without a greasy feeling. The restaurant serves ready-to-fry tempura, which is deep-fried in sesame oil until crispy, and Kamaiten-don, which is prepared with a sauce that has been passed down from generation to generation.
The toppings are plentiful and include shrimp, cave roe, fish roe, eggplant, and shishito don peppers (ingredients other than non-shrimp may change seasonally). Tendon is served only during lunch hours and comes with house-made sauerkraut and miso soup.
