Fukuoka is the center of life in Kyushu, Japan's third largest island, and is a laid-back port city known for its excellent food and warm human touch. With an abundance of fishing in the area, Fukuoka has a good number of izakaya (Japanese-style pubs) with good value for money, as well as make bars where you can get some good drinks, and during my week in Fukuoka, I was barely awake one night at a time.
I visited four izakaya and five make bars during my week in Fukuoka, and there is always a place for you.
🤗 お料理 うち山
If I were to recommend a restaurant where you can eat and drink at the same time, お料理うち山 is an excellent choice in my mind.
Located near Akasaka Station, this fully reservation-only izakaya is owned by a young couple, with the older man busy cooking in the kitchen and the woman greeting customers at the bar. The restaurant serves only a fixed menu, with squid sashimi being sweet and fresh, shabu-shabu beef being incredibly tender, and tuna potbelly hand rolls full of grease-induced delight.
The wine selection is also good, and the wine cabinet displays well-known inscriptions such as the Fourteenth Generation, Rock Self-Slow, Huayang Bath, and Glorious Chrysanthemum.
The style of this restaurant is roughly equivalent to that of a sophisticated bistro in the Japanese food world, and the environment is more comfortable than that of a private izakaya, and the ingredients and cooking techniques are not inferior to some high-end Japanese restaurants. When you check out, you can see that 7 dishes and 6 glasses of sake are about 16,000 yen.

Strictly speaking, this izakaya is not in Fukuoka City, but in Kitakyushu City, Fukuoka Prefecture. I took a train ride from Fukuoka City for more than an hour, and I made a reservation half a year in advance for this tabelog Izakaya in all of Japan.
It was 8:30 p.m. when I arrived at the restaurant, and while the front of the restaurant was not unlike that of a typical izakaya, the entrance was filled with diners ready for their second round of entry. The restaurant specializes in fish dishes and the portions are generous, with a platter full of sashimi featuring a variety of fresh ingredients, including boiled bonito and deep-fried onigiri, both of which are very tasty. One of the restaurant's specialties is the eel tamago-yaki, where grilled eel is rolled in between the tamago-yaki to create layers of sweetness and flavor.
The level of cuisine is a natural part of this restaurant's superb rating, but another plus point is the great generals who score full marks for hospitality. As soon as the doors opened for the second round, the guys greeted each guest warmly, keeping a keen eye on each table's needs even as they were busy cutting up the fish behind the bar. Because of a few chats while sitting at the bar, the general made a point of waiving the drink bill for us at the checkout. A neighboring guest checked out with a reservation for the next time he wanted to come in.

The store is divided into Honkan and Bekan, with Honkan available a la carte from the menu, and Bekan's set menu available if you have a phobia of choosing. The store has a two-page wine list by the glass, and a one-page wine list by the bottle that includes New Deal No. 6.
This set menu is one of those that has a small number of courses but a large portion. The first sashimi platter of tuna, squid and blowfish is about three times the size of other restaurants. The deep-fried puffer fish, vinegar-mixed puffer fish skin and then a huge tiger puffer fish white roe make your mouth ooze with oil, which is quite ungainly to eat.

🤗 ひょご鶏
The main branch of this yakitori restaurant is located in Kumamoto, and both stores tabelog ratings have been around 3.7 for a long time.
The set menu of 4 small dishes + 6 skewers of yakitori + 2 skewers of vegetables + 1 cup of chicken soup is only 5,000 yen, and if that's not enough there's another menu to add on.
The yakitori has excellent fire control, whether it's the half-raw wasabi chicken breast or the tender, juicy chicken thighs.
Also, the store has a very good sake list, with a lot of local Kyushu sake like Kouei Kiku, and I finally got to drink some of the produced soil here that I didn't get to drink at the other store earlier in the day.

A small izakaya with a small store and a lot of good drinks. I drank eight glasses in a row that night, and just as I finished the Yonai Bird and Nirvana Turtle, the owner brought out a few No. 6s from his stock, and when he saw that I had started ordering niche wines such as the Flying Luan and the Yarakudai, he enthusiastically introduced them, and then pulled out his cell phone to show me a number of pictures of him and Sake Zangen Dushi.

A make bar with a fuller assortment of great liquors such as XIV Generation, New Deal, and And Now, but with a relatively slightly higher price tag.
If you don't drink a big drink, there are also cheaper options for putting questions. Except for Bubbly Sky Frog, which can only be opened whole, the other fourteen generations of Dragon Moon and Double Rainbow, the New Deal Heretic Church Ancestor Corporation, Invisible Pink Unicorn, and Introduction to Peasant Art can be sold by the glass.
The only problem is that without realizing it the wallet is empty ......

🤗 LIBROM Craft Sake Brewery
The store offers comparative tasting of different kinds of wines, so I tried 6 kinds of wines for only 2,000 to 3,000 yen. Almost all of the drinkers are young girls, and the bar offers small dishes to go with the drinks.

The store is located some distance away from the busy neighborhood, but it's quite convenient by subway. The store has a decent variety and taste of sake, and I ordered four glasses of the soon-to-be-expired Tenmai Junmai Daiginjo 飲み比べset.Besides，the store does a good job with small dishes, and it seems to have recently introduced its own self-developed ramen.
